This homemade syrup is traditionally made to go with the Guyanese-style pancakes that are served on the Tuesday before Lent.
It is a syrup that you can make and use throughout the year on a variety of desserts and other baked goods.

Yield: 1 1/4 cups
Ingredients:
- 2 cups Demerara Sugar (substitute with cane sugar or packed brown sugar)
- 1 (4-inch) cinnamon stick
- 1 cup water
Preparation:

Add sugar, cinnamon stick and water to a medium sized sauce pot. Turn the heat to medium high and stir to dissolve the sugar.

Bring the mixture to a boil then immediately reduce heat to low and let simmer gently for 15 - 17 minutes. Remove from heat and set aside to cool completely before use.
