Cloves come from a tropical evergreen tree of the myrtle family. It is the dried flower buds that are the spice we know as cloves.
Cloves, along with nutmeg and cinnamon are grown in large exportable quantities in Grenada, referred to as the spice isle.
Cloves are used for both savory and sweet preparations and can be used whole or ground.
Use cloves to season hams, sausages, meats, mincemeat pies, fish, preserves and pickles.
Cloves are great in condiments and relishes, gravies, soups, sauces and desserts. They impart great depth of flavor to sorrel drink, mauby, ginger beer and other fruit juices. Cloves are used in alcoholic beverages as well.
