Creole Sauce (Salsa Criolla)

This particular Creole sauce recipe is a zesty accompaniment to seafood and fish dishes.

INGREDIENTS:

  • 1 cup tomato puree
  • 1/4 cup fresh lime juice
  • 1 cup onions (finely chopped)
  • 1 tablespoon chili pepper (finely chopped)
  • salt and black pepper to taste
  • 3 pimiento stuffed olives (cut into slices)

PREPARATION:

1. In a bowl, thoroughly blend together the tomato puree, lime juice, onions, celery, chili pepper, salt, and black pepper.

2. Stir in the olive slices.

3. Serve at once or refrigerate up to 6 days.
