Potato Wedges

I love French Fries and who does not love a way to enjoy this treat without the guilt of calories? I do and you do.

Making homemade wedges are easy when done in the oven.

For a spicy version, I used an all-purpose seasoning salt and added extra black pepper.

Prep Time: 20 minutes

Cook Time: 45 minutes

Total Time: 1 hour, 5 minutes

Yield: Serves 3

Ingredients:

  • 2 lb Idaho potatoes
  • All purpose seasoning salt (your favorite brand)
  • Salt and pepper to taste

Preparation:

  1. Bring a large saucepan of water to a roaring boil. When the pot comes to a boil, salt liberally.

  2. Preheat oven to 400 degrees F.

  3. Scrub potatoes, cut in halves and then into thick cut wedges.

  4. Add potatoes to boiling water and cook for 3 minutes (time begins when the pot comes back to a boil).

  5. Drain potatoes well, shaking off any excess water. Transfer to a large baking sheet.

  6. Drizzle potatoes with oil, all purpose seasoning and black pepper. Toss to coat and spread out in an even layer.

  7. Roast for 20 minutes; use a flat spatula to flip wedges and bake for 20 - 25 minutes or until the potatoes are nicely browned.
