- 1 lb potatoes
- 2 Tbsp vegetable oil
- Minced hot pepper or pepper sauce to taste
- 1/4 cup sliced green onions (white and green parts)
- 1 Tbsp chopped cilantro (optional)
Peel the potatoes and add to a sauce pot with lukewarm water, cover and bring to a boil. When the pot comes to a boil, salt the water to taste.
Cook potatoes until a fork or knife inserts easily. Drain well.
Transfer drained potatoes to a large bowl, add oil and pepper sauce and mash until smooth.
Toss in green onions and cilantro and fold into potato mixture. Taste for salt and adjust if necessary. Serve with roti or rice.
