Cantaloupe Salad (Ensalada de Cantalupo)

Refreshing cantaloupe salad makes a refreshing summer treat or entertainment piece. Lower the fat of the recipe by using low or reduced fat mayonnaise and cottage cheese.

Prep Time: 10 minutes

Cook Time: 00 minutes

Ingredients:

  • 2 ripe cantaloupes
  • 2 cups fresh strawberries
  • 1 head of lettuce (leafs separated)
  • 1 cup mayonnaise
  • 1/2 cup cottage cheese
  • sliced strawberries for garnish

Preparation:

1. Cut melons in half and remove the seeds.

2. Using a melon baller, scoop out the pulp of one melon in small balls. Put balls in a bowl and set aside.

3. Cut the second melon into uniform half-moon shaped slices. Set slices aside.

4. Lay lettuce leafs flat on individual salad plates.

5. Lay the melon slices around the plate in a pinwheel design.

6. Mix together the melon balls, fresh strawberries, mayonnaise, and cottage cheese.

7. Place equal amounts of the mix in the center of each plate.

8. Garnish with sliced strawberries and serve.
