The white-fleshed sweet potato is as versatile as the traditional English potatoes. In the Caribbean, sweet potatoes come in a variety and people are always finding different ways to use them. Often, they are substituted for regular potatoes.
I wanted to serve a different kind of mashed potato dish and so I opted to use the white-flesh sweet potatoes to make a spiced mashed potato dish. Serve this just as you would regular mashed potatoes.

Yield: Serves 4
Ingredients:
- 2 lbs white-flesh sweet potatoes
- Salt
- 3 Tbsp melted butter (salted or unsalted)
- Freshly ground black pepper to taste
- 1/4 cup warm whole milk
- Minced hot pepper to taste
- 1/4 cup sliced green onions (white and green parts)
Preparation:

Peel sweet potatoes, cut into large pieces and put into a pot, cover with water and bring to a boil on high heat. When the pot comes to a boil, salt the water and let cook until a knife inserts easily. Drain thoroughly.

Add drained potato to hot pot (same pot it was cooked in), pour in the milk and butter and mash until smooth.

Season with hot salt, black pepper and hot pepper. Mix well. Fold in the green onions.

Serve immediately.
