Every culture has a chicken soup recipe. This chicken and noodle soup is popular in the Dominican Republic and just as comforting as any chicken soup recipe.

The braised chicken in this stew practically falls off the bone and the sauce tastes great over white rice or potatoes. In Spanish this dish is called pollo guisado.

If you like fried chicken, try Chicharrones de Pollo, the Dominican version of fried chicken. The chicken is marinated in a lime based marinade with garlic, then coated in seasoned flour and fried. Serve the fried chicken with traditional rice and beans or potatoes.

This savory chicken dish is a Puerto Rican favorite. Depending on the country, there are other ways of making pollo en escabeche. In the Spanish language, escabeche usually refers to pickled dishes. However, this dish calls for chicken cooked in a vinaigrette and olive oil sauce. The result is highly flavorful, savory chicken.

Here is my recipe for homemade chicken stock, which is inspired by the Caribbean flavors that I grew up with. I use this chicken stock extensively as a soup or stew base and it's great to use in place of water when cooking rice. Use it in recipes that call for chicken stock or broth.
