- 1 pound dried white beans (soaked overnight)
- 2 1/2 quarts of water
- 2 bay leaves
- 6 ounces salt pork
- 2 ham hocks
- 1/4 cup olive oil
- 4 cloves garlic (minced)
- 1 medium white onion (minced)
- 1 teaspoon ground cumin
- 2 teaspoons dried oregano
- salt to taste
- white pepper to taste
2. Place the beans, water, bay leaves, salt pork, and ham hocks in a soup pot and bring to a boil over medium heat. Reduce the heat to low. Cover and simmer for 1 1/2 hours.
3. Remove the salt pork and discard. Remove the ham hocks and shred the meat from the bones. Put the shredded meat back into the soup pot.
4. In a skillet, heat the olive oil. Sautee the onions and garlic until soft and translucent. Add to the soup pot.
5. Add the cumin, oregano, salt, and white pepper to the pot. Simmer for 15 minutes.
