Turkey Stew (Pavo Guisado)

This turkey stew recipe is a great idea for using up leftover turkey from the holidays. But, you don't have to use leftovers. You can use fresh turkey and serve this stew for any occasion. Serve with crusty bread and tossed salad.

Prep Time: 1 hour, 15 minutes

Cook Time: 1 hour, 35 minutes

Ingredients:

  • 4 pounds turkey (cut into pieces)
  • 2 cloves of garlic (crushed)
  • salt to taste
  • pepper to taste
  • ___________________________
  • 1 tablespoon red wine vinegar
  • 1/4 cup vegetable oil
  • 1/4 cup tomato sauce
  • 1 cup chicken stock
  • 1 cup dry red wine
  • 1/2 green bell pepper (seeded and chopped)
  • 12 olives (pitted)
  • 2 tablespoons capers
  • 1/2 pound potatoes (peeled and cubed)
  • 1 1/2 cups peas

Preparation:

1. Season the turkey pieces with salt, pepper and vinegar and let stand for 1 hour.

2. Heat the oil over medium heat in a soup pot.

3. Sautee the turkey pieces a few at a time until all are lightly browned.

4.Add the tomato sauce, chicken stock, red wine, and bell pepper.

5.Cover the pot and simmer for 1 hour.

6. Add the capers, olives, and potatoes and continue to simmer for 30 minutes more or until both the potatoes and turkey pieces are done.

7. Add the peas at the end of the cooking time and let simmer for 5 minutes more.

Serves: Makes 4 servings.
