Here is a quick bean recipe for when you are in a dinner rush or forgot to soak dried beans overnight. These fast beans taste great over white rice.
Prep Time: 5 minutes
Cook Time: 25 minutes
Ingredients:
- 2 tablespoons olive oil
- 2 tablespoons ham (diced)
- 2 tablespoons sofrito
- 1 cup tomato sauce
- 1 cup water
- 1/8 pound potatoes (diced)
- 8 pimento stuffed olives
- 1 16-ounce can pink beans (drained and rinsed)
- salt and pepper to taste
Preparation:
- Heat olive oil in a pot. Saute the ham for 1 minute. Add sofrito and tomato sauce. Cook over medium heat for 5 minutes.
- Add the water and potatoes. Bring to a boil and add the olives, beans, salt and pepper.
- Bring back to a boil, them immediately lower the heat and simmer uncovered for 20 minutes.
