Quick Beans - Habichuelas Rapiditas

Quick Beans

Here is a quick bean recipe for when you are in a dinner rush or forgot to soak dried beans overnight. These fast beans taste great over white rice.

Prep Time: 5 minutes

Cook Time: 25 minutes

Ingredients:

  • 2 tablespoons olive oil
  • 2 tablespoons ham (diced)
  • 2 tablespoons sofrito
  • 1 cup tomato sauce
  • 1 cup water
  • 1/8 pound potatoes (diced)
  • 8 pimento stuffed olives
  • 1 16-ounce can pink beans (drained and rinsed)
  • salt and pepper to taste

Preparation:

  1. Heat olive oil in a pot. Saute the ham for 1 minute. Add sofrito and tomato sauce. Cook over medium heat for 5 minutes.
  2. Add the water and potatoes. Bring to a boil and add the olives, beans, salt and pepper.
  3. Bring back to a boil, them immediately lower the heat and simmer uncovered for 20 minutes.
Servings: Serves 4 people.
