Pigeon Peas Stew (Gandules Guisados)

Here is a simple, yet tasty stew to keep you warm during the winter. Pigeon peas (gandules) are grain legumes that are similar to beans. They are a great source of protein. Calabaza is also known as West Indian pumpkin. You can substitute just about any type of winter squash in its place.

Prep Time: 10 minutes

Cook Time: 1 hours, 30 minutes

Ingredients:

  • 1 pound of pigeon peas (cleaned fresh, frozen or canned)
  • 1/2 pound of calabaza (peeled, seeded and cubed – substitute Hubbard squash)
  • 6 cups chicken stock
  • 1 teaspoon of salt
  • 2 tablespoons of sofrito
  • 1 chicken bullion cube

Preparation:

  1. Rinse pigeon peas under cold water.
  2. Put the peas and chicken stock into a large soup pot.
  3. Add the calabaza and bring to a boil.
  4. Cover and reduce heat to low. Simmer for 1 hour.
  5. Add salt, sofrito, and bullion cube. Continue to simmer, uncovered, for another 30 minutes until the stew thickens to desired texture.
Serves: Makes 6 servings.
