Here is a simple, yet tasty stew to keep you warm during the winter. Pigeon peas (gandules) are grain legumes that are similar to beans. They are a great source of protein. Calabaza is also known as West Indian pumpkin. You can substitute just about any type of winter squash in its place.

Cook Time: 1 hours, 30 minutes
Ingredients:
- 1 pound of pigeon peas (cleaned fresh, frozen or canned)
- 1/2 pound of calabaza (peeled, seeded and cubed substitute Hubbard squash)
- 6 cups chicken stock
- 1 teaspoon of salt
- 2 tablespoons of sofrito
- 1 chicken bullion cube
Preparation:
- Rinse pigeon peas under cold water.
- Put the peas and chicken stock into a large soup pot.
- Add the calabaza and bring to a boil.
- Cover and reduce heat to low. Simmer for 1 hour.
- Add salt, sofrito, and bullion cube. Continue to simmer, uncovered, for another 30 minutes until the stew thickens to desired texture.
