Gallician soup, originally from Spain, is as much a culinary tradition of Latin Caribbean food as roast suckling pig.
Prep Time: 5 minutes
Cook Time: 30 minutes
Ingredients:
- 8 cups chicken stock
- 1/2 pound white beans (cooked)
- 1/2 pound smoked ham (diced)
- 2 chorizo sausages (sliced)
- 1 medium yellow onion (sliced)
- 3 garlic cloves (minced)
- 1 pound potatoes (peeled and diced)
- 10 ounces collard greens
- salt and pepper to taste
Preparation:
1. Combine all ingredients in a soup pot.2. Bring to a boil.
3. Reduce heat and simmer for 30 minutes.
Servings: Makes 6 to 8 servings.
