Gallician Soup (Caldo Gellego)

Gallician soup, originally from Spain, is as much a culinary tradition of Latin Caribbean food as roast suckling pig.

Prep Time: 5 minutes

Cook Time: 30 minutes

Ingredients:

  • 8 cups chicken stock
  • 1/2 pound white beans (cooked)
  • 1/2 pound smoked ham (diced)
  • 2 chorizo sausages (sliced)
  • 1 medium yellow onion (sliced)
  • 3 garlic cloves (minced)
  • 1 pound potatoes (peeled and diced)
  • 10 ounces collard greens
  • salt and pepper to taste

Preparation:

1. Combine all ingredients in a soup pot.

2. Bring to a boil.

3. Reduce heat and simmer for 30 minutes.

Servings: Makes 6 to 8 servings.
