Black Beans and Yellow Rice

Rice and beans are staple foods in Caribbean Cuisine. This recipe combines yellow rice with black beans, but you can make this recipe with any type of bean you like.

Prep Time: 15 minutes

Cook Time: 45 minutes

Total Time: 1 hour

Ingredients:

  • 2 tablespoons olive oil
  • 1/2 cup sofrito
  • 1 packet sazón with annatto
  • salt to taste
  • 1 15.5 oz can black beans (drained and rinsed)
  • 2 cups long-grain white rice
  • 4 cups of water (or chicken broth)

Preparation:

  1. Heat the olive oil in a pot over medium heat.
  2. Add the sofrito and lightly fry for about one minute.
  3. Add the sazón, salt, beans, and rice. Stir to combine the ingredients and coat the rice with color.
  4. Pour in the water (or chicken broth) and bring to a rolling boil. Allow to boil for one to two minutes, and then stir the rice mixture.
  5. Reduce the heat to low and cover with a tight fitting lid that will not allow steam to escape. Do not lift the lid during the cooking time.
  6. Cook on low for 30 minutes. Remove the lid, fluff the rice, and then cover again and let sit a few minutes before serving.
Servings: Makes approximately 4 one cup servings.

First of all, anything that calls for sazon AND Sofrito is a good thing in my book! This was SUPER easy to make, and incredibly tasty! I will absolutely be making it again. It was the perfect compliment to my caribbean pork loin and grilled pineapple- I definitely ate well last night :o)
