Papaya and Milk Smoothie (Refresco de Papaya)

This cold papaya smoothie from the Dominican Republic will keep you cool on a hot day. It's so good, you can even serve it as dessert. You will need an electric blender or food processor to make this drink.

Prep Time: 2 hours, 00 minutes

Cook Time: 0 hours, 00 minutes

Ingredients:

  • 1 ripe papaya
  • 1/2 cup milk
  • 3 tablespoons lime juice
  • 1/2 teaspoon lime rind (freshly grated)
  • 1/4 cup sugar, 1/2 teaspoon vanilla extract
  • 1/2 cup crushed ice
  • lime wedges for garnish (optional)

Preparation:

1. Peel the papaya. Cut it in half lengthwise, remove the seeds, then coarsely chop the papaya flesh.

2. Place the papaya chunks and the rest of the ingredients, except the garnish, into an electric blender or food processor.

3. Mix on high speed for 20 to 30 seconds, until the mixture is smooth and thick.

4. Pour the smoothie into a tall frosted glass, garnish with a lime wedge, and serve at once.

Servings: Makes 3 cups.
