For this recipe, you will need a tostonera (plantain press) specially designed to form cups; I like to use the Tostobueno®. Then fill the cups with your favorite filling such as picadillo or Chef DonClark’s Coconut Chicken Toston Cup Filling.

Prep Time: 10 minutes

Cook Time: 10 minutes

Ingredients:

  • 1 green plantain per person
  • Water
  • Garlic Salt
  • Oil for frying

Preparation:

  1. Fill large bowl with enough warm water to cover the amount of plantains you plan on preparing. Add garlic salt to taste.
  2. Peel green plantains and Cut into 2 inch chunks. Place the chunks into the garlic water and soak for at least 30 minutes.
  3. Heat oil to 360 degrees Fahrenheit.
  4. Remove plantains from garlic water. Pat dry with paper towels. Fry the plantain pieces for 6 to 7 minutes. Remove the plantains and let cool for about 1 minute.
  5. Using the plantain press designed to make cups, place fried plantains in the mold lengthwise. Press down firmly to form a cup. Cautiously remove the cup, do not turn off the oil.
  6. Re-fry the molded plantain in the hot oil until golden brown (about 3 minutes).
  7. Remove the cups and drain on paper towels. When cool enough to handle, arrange on cups on a platter and fill stuff with your favorite filling.
