For this recipe, you will need a tostonera (plantain press) specially designed to form cups; I like to use the Tostobueno®. Then fill the cups with your favorite filling such as picadillo or Chef DonClark’s Coconut Chicken Toston Cup Filling.

Ingredients:
- 1 green plantain per person
- Water
- Garlic Salt
- Oil for frying
Preparation:
- Fill large bowl with enough warm water to cover the amount of plantains you plan on preparing. Add garlic salt to taste.
- Peel green plantains and Cut into 2 inch chunks. Place the chunks into the garlic water and soak for at least 30 minutes.
- Heat oil to 360 degrees Fahrenheit.
- Remove plantains from garlic water. Pat dry with paper towels. Fry the plantain pieces for 6 to 7 minutes. Remove the plantains and let cool for about 1 minute.
- Using the plantain press designed to make cups, place fried plantains in the mold lengthwise. Press down firmly to form a cup. Cautiously remove the cup, do not turn off the oil.
- Re-fry the molded plantain in the hot oil until golden brown (about 3 minutes).
- Remove the cups and drain on paper towels. When cool enough to handle, arrange on cups on a platter and fill stuff with your favorite filling.
