Due to our Colonial past, we have deep British traditions and rituals that we still perform. These rituals and traditions are now a part of who we are as Caribbean people. We like to have afternoon tea. Rich buttery pastries and delicate delights find their way to the table.
So popular are these treats that they are made, packaged and sold commercially in shops and supermarkets. Cheese Straws are prized. Here, I've put a twist on Cheese Straws by making them into crunchy wafers by altering the temperature of the ingredients . They are great as is, with a cup of tea or coffee of a chilled glass of white wine.

Cook Time: 10 minutes
Total Time: 30 minutes
Yield: 14 wafers
Ingredients:
- 4 oz sharp cheddar cheese, room temperature, grated
- 4 oz unsalted butter, room temperature
- 1 cup all purpose flour
- 1/2 tsp table salt
- 1/2 tsp pepper sauce
Preparation:
- Preheat oven to 400 degrees F.
- Add all the ingredients to a medium bowl and using a fork, mix and mash everything.
- Transfer the cheese-butter mixture to a pastry bag or a large plastic bag with one part of the tip snipped off.
- Pipe the mixture directly onto a large baking sheet; average 3 to 4 inches in length.
- Take a fork and lightly press the mixture or you can opt to leave it as is.
- Bake for 10 - 12 minutes or until lightly tanned.
- Cool on a wire rack.
- Serve as is.
