Pavochon - Roasted Turkey One of my favorite Thanksgiving traditions is roasting a turkey like it was a suckling pig. It's called Pavochón. Now I know what you're thinking - Thanksgiving is an American holiday. That's true and the holiday really wasn't celebrated in Puerto Rico until it became a commonwealth of the United States.

Here is how the new tradition came about. In Puerto Rico, a succulent pork roast is the meat of choice for most holiday meals. The island's people have used their ingenuity to combine their traditions with American traditions. Turkey is prepared and cooked in a manner that is a lot like roasted pork.

This flavor intensive recipe will go over well with the most fussy eaters in your family. So, for those of you who want to try something new and a little more flavorful this year try Pavochón.
