The Caribbean is overflowing with an abundance of bean and legume dishes. Not only are beans and legumes nutritious, they can form a complete protein when combined with rice. This is a valued characteristic for vegetarians. But in pre-refrigeration days, fresh meat was in short supply and expensive. The combination of beans and rice was the cheapest and easiest way for one to get his/her daily protien needed to survive. So which beans and legumes are the most popular and how are they used in Caribbean cooking?
