During the 1800s, the British and French brought indentured workers from India to the islands to work the fields. The workers had a significant influence on the cuisine and it's very noticeable in today's famous curry dishes. Many of the traditional spices were not easily obtained on the islands, so the recipes were adapted using local ingredients. Curry seasoning, Colombo powder, and garam masala are all used.
