In this recipe, pigeon peas are sauteed with ham, onions, and herbs for seasoning. Doved peas make a quick, easy, and excellent protein packed side dish. They can be eaten and enjoyed any time of year. Doved peas taste the best when made with fresh pigeon peas. However, if fresh isn't available, you can use dried or canned.
