Ropa Vieja - Old Clothes

The term ropa vieja literally means "old clothes" in Spanish, but I'm not going to tell you to eat old clothes! The shreds of meat and vegetables in this hearty Cuban beef stew resemble colorful strips of rags, hence the name. Eat this stew on its own, or serve over rice and sop it up on crusty bread.
