Lamb and Roasted Pepper Stew is one of my favorite springtime recipes. Many Spanish households serve a lamb dish with their Easter meal. Lamb and Roasted Pepper Stew is a perfect accompaniment for rice and beans. But, if you don't celebrate Easter, you can still enjoy this recipe any time you like. It is made with roasted, sweet peppers from Spain called piquillos.
